Junior Sous Chef (Full Time)

The Cahernane Hotel, Mucross Road, Killarney is a four star boutique 46 bedroom hotel just outside Killarney Town.

We are looking for a Junior Sous Chef to join the team.

Salary from €37,000

Eligible candidates must have:

·         Accommodation within commuting distance (unfortuanately we cannot offer accommodation for the candidate)

·         Eligible to work in Ireland

·         Good level of English

·         Experience cooking brasserie style food in a country house / 4 star hotel in Ireland

About the role

What’s involved in the role:

·        Managing the day to day running of the kitchen in the absence of the Sous or Head Chef.

·        General cost and quality control for both incoming and outgoing goods.

·        To ensure that stock rotation is carried out correctly and documented on a daily basis and taken accurately.

·        To ensure the proper training on all kitchen equipment and catering procedures to kitchen staff and kitchen porters

·        To ensure that food served from the kitchen is of the required standard highlighted in the menu specification

·        To carry out customer retention policy and communicate hotel services to staff.

·        Ensuring the smooth running of food service in conjunction with the kitchen and restaurant teams.

·        Working in an organised, hygienic manner at all times ensuring the HACCP regulations are adhered to.

·        Receiving and storing supplier deliveries and stock rotation in accordance with HACCP specifications.

·        Maintaining kitchen in a clean and hygienic state.

  • Chef de Partie experience of a minimum of one year
  • HACCP or Food Hygiene training and experience
