Senior Operations Manager
The Senior Operations Manager will be responsible for the daily operational performance of all F&B and C&B areas across the complex. This role focuses on service standards, labour control, compliance, and team leadership, ensuring seamless guest experiences across bars, restaurant, events, and banqueting.
This role acts as a key link between Duty Managers, Department Heads, and the senior leadership team.

Key Responsibilities
F&B & C&B Operational Leadership
Oversee daily operations across Joel’s Restaurant, Bars, Breakfast, Room Service, and Conference & Banqueting.
Ensure SOPs, service standards, and brand expectations are embedded and consistently followed.
Be highly visible during peak service periods, leading from the floor.
Support event execution from set-up to service delivery, ensuring function sheets are followed accurately.
Team Leadership & Performance
Lead, coach, and support Duty Managers, Bar Managers, Supervisors, and C&B Managers.
Drive performance through daily briefings, service walk-throughs, and follow-ups.
Support recruitment, training, onboarding, and performance management across F&B teams.
Develop supervisors and managers through coaching and on-the-job training.
Commercial & Cost Control
Monitor labour, productivity, and wage percentage across F&B and C&B.
Support stock control, GP margins, waste reduction, and purchasing controls.
Review weekly KPIs including covers, spend per head, upselling, wage %, and service scores.
Standards, Compliance & Safety
Ensure full compliance with HACCP, allergen controls, licensing law, health & safety, and fire safety.
Conduct regular audits across bars, kitchens, banqueting spaces, and public areas.
Follow up on non-conformances and ensure corrective actions are implemented.
Guest Experience & Service Recovery
Lead service recovery for complaints and guest issues in F&B and events.
Monitor feedback and implement action plans for continuous improvement.
Cross-Department Coordination
Work closely with Kitchen, Front Office, Sales, Reservations, and Maintenance to ensure smooth operations.
Support large-scale events, peak trading periods, and seasonal campaigns.
Skills & Experience Required
Senior management experience in a high-volume hotel, banqueting, or restaurant operation.
Strong background in F&B and C&B operations.
Proven leadership of large teams and managers.
Strong commercial awareness and ability to control labour and costs.
Excellent communication, organisation, and problem-solving skills.
Strong knowledge of HACCP, health & safety, and licensing compliance.
