Senior Chef De Partie

The Malone has just rebranded and has undergone an extensive refurbishment of the bar, restaurant, and wider hotel. We have a fantastic opportunity for 2 experienced Senior Chef de Parties to join our growing team at an extremely exciting time! We are a locally owned, boutique four-star* hotel where your personality and originality will have a chance to shine!

The successful candidates will be contracted to 37.5 hours per week.

As Senior Chef de Partie, you will be a key member of our kitchen team, responsible for managing a section and supporting the Head Chef and Sous Chef in delivering consistently high-quality dishes. You will bring skill, efficiency, and creativity, ensuring each plate meets our exacting standards.

About the role

Key Responsibilities:

  • Manage and run an allocated section (e.g., larder, sauce, garnish, pastry) with precision and efficiency.

  • Prepare, cook, and present dishes in line with the hotel’s menu specifications and standards.

  • Assist with menu development, suggesting seasonal dishes and improvements.

  • Maintain high standards of food hygiene, cleanliness, and organisation.

  • Ensure compliance with all food safety regulations and HACCP procedures.

  • Train and mentor junior chefs, offering guidance and constructive feedback.

  • Monitor stock levels, report shortages, and assist with ordering.

  • Support smooth kitchen operations during service, particularly during busy periods.

  • Work with the Kitchen and Hotel Management team to ensure Health and Safety policies are adhered to and always implemented.

What you will need

Required criteria

  • Proven experience as a Chef de Partie or higher in a quality kitchen environment.
  • Solid understanding of fresh, seasonal cooking and flavour balance.
  • Ability to manage a section independently and work calmly under pressure.
  • Strong teamwork and communication skills.
  • A passion for quality and attention to detail.
  • Knowledge of food safety regulations and best practices.
  • Fully knowledgeable on Health & Safety, Hygiene, Fire and Security legislation.
  • Excellent command of spoken and written English.
  • The right to work and live in the UK.

Desired criteria

  • Recognised qualification in catering or food management.
