Sous Chef (Full Time)
The 4-star Maritime Hotel, is known for fresh, high‑quality food, warm hospitality, and a team culture built on respect, creativity, and consistency. We’re growing, and we’re looking for a talented Sous Chef who thrives in a fast‑paced kitchen and takes pride in delivering exceptional dishes every time.
With 120 bedrooms, a busy food and beverage offering through the Ocean Restaurant, Maritime Bar, and Windward Banqueting Suite, we’re a hub for locals and visitors alike—especially during family celebrations, special occasions, and seasonal events.
As Sous Chef, you’ll be the right hand to the Head Chef, helping lead the kitchen team and ensuring smooth service across all shifts. You’ll support menu execution, maintain high standards of food safety, and help create a positive, collaborative kitchen environment.
About the role
Key Responsibilities
Support the Head Chef in daily kitchen operations
Lead the team during service, ensuring quality and consistency
Train, mentor, and motivate junior chefs
Oversee prep, cooking, plating, and pass management
Maintain HACCP standards and ensure full compliance
Assist with menu development and specials
Manage stock rotation, ordering, and waste control
Uphold cleanliness, organisation, and kitchen safety
Step in to run the kitchen in the Head Chef’s absence
What We’re Looking For
Previous experience as a Sous Chef or strong Chef de Partie ready to step up
Passion for fresh, seasonal food and high‑quality cooking
Strong leadership and communication skills
Ability to stay calm and focused under pressure
Excellent knowledge of HACCP and food safety
A team player with a positive, can‑do attitude
Reliability, professionalism, and pride in your craft
