About this role
As a Breakfast Chef de Partie at Castle Leslie Estate, you play a vital part in delivering a high‑quality morning dining experience that reflects the estate’s reputation for exceptional hospitality. This daytime role focuses on leading the breakfast service, ensuring consistency, quality, and efficiency in all dishes served to our guests at the start of their day.
You will be responsible for the preparation, cooking, and presentation of all breakfast items, maintaining high culinary standards across both à la carte and buffet offerings. This includes managing your section independently, ensuring mise en place is completed to a high standard, monitoring stock levels, and adhering to HACCP and all food safety regulations.
Working closely with the Head Chef and wider kitchen team, you help design and refine breakfast offerings, contribute to smooth service flow, and support junior staff when required. You also ensure your workstation is clean, organised, and fully prepared for the next day’s service before handover.
This role requires excellent time management, strong organisation, and the ability to work efficiently in a calm, structured morning environment. As a key contributor to the guest experience, your attention to detail, consistency, and passion for breakfast cookery help set the tone for each guest’s day at the estate.

- Salary Range: from €15.00 per hour, reflective of your skills and experience.
