The Role

As Food & Beverage Manager, you will be responsible for the smooth day-to-day running of both outlets, driving service standards, team performance, and profitability while maintaining full compliance with food safety and licensing regulations.

You will work closely with the General Manager, Head Chef & Operational Managers to deliver a seamless guest journey across all food and beverage touchpoints.

ey Responsibilities

Operations & Service

  • Oversee daily operations of LJ’s Bar & Restaurant and the Ballroom Bar.

  • Ensure consistent service standards, SOP compliance, and guest satisfaction.

  • Maintain high standards of presentation, cleanliness, and atmosphere.

People Leadership

  • Lead, train, and develop a large Food & Beverage team.

  • Support supervisors and duty managers to deliver strong floor leadership.

  • Conduct training, probation reviews, and performance management.

Commercial & Financial Control

  • Manage labour costs, stock control, GP margins, and wastage.

  • Analyse KPIs including covers, average spend, labour %, and service scores.

  • Drive upselling and promotional activity to maximise revenue.

Compliance & Safety

  • Ensure full HACCP, allergen, licensing, and health & safety compliance.

  • Maintain training records and ensure audits are passed successfully.

Communication & Collaboration

  • Work closely with the Head Chef on menus, service flow, and allergen controls.

  • Liaise with the C&B team for event bar setups and service execution.

  • Attend daily briefings and operational meetings.


Skills & Experience Required

  • Proven experience as an F&B Manager, Operations Manager, or Senior Supervisor in a high-volume hotel or restaurant.

  • Strong leadership and people management skills.

  • Commercial mindset with experience managing budgets and KPIs.

  • Excellent knowledge of Irish food safety, licensing, and H&S legislation.

  • Ability to thrive in a fast-paced, multi-outlet environment.
