Commis / Chef de Partie

Killeavy Castle Estate is seeking a Commis / Chef de Partie for this award winning 4-star Hotel.


Experienced and motivated Commis / Chef de Partie to join our team.  In your role of Commis / Chef de Partie, you will be responsible for being part of the kitchen and food service team within the Hotel and reporting directly to the Sous and Head Chef.  To ensure the constant delivery of the core mission and values of Killeavy Castle Estate. 


Role Objective;


Working as part of the kitchen and food service team, the Commis / Chef de Partie will provide the highest of food service in a customer focused environment.  The successful candidate will have a minimum of one year’s chef experience, preferably in the hotel industry.  You will possess excellent interpersonal, communication skills and will enjoy building good relationships.

About the role

Key Duties include;

  • To prepare, cook and present all dishes within area of responsibility to the correct menu specification with regard to quality and quantity.
  • Helping the sous chef and head chef to develop new dishes and menus
  • Ensuring you and your team have high standards of food hygiene and follow the rules of health and safety
  • Monitoring portion and waste control to maintain profit margins
  • Measuring dish ingredients and portion sizes accurately
  • Dealing with deliveries and stock rotation
  • To assist in the preparation of food according to recipes and cooking standards.
  • To ensure that any problems with food quality are identified and dealt with or reported promptly to the appropriate person
  • To maintain all storage areas with regard to temperature, ventilation and cleanliness.
  • To ensure that all food items are stored under the correct conditions according to food type.
  • Flexibility with working hours is essential within this role.
  • Reliable, hardworking and have the ability to work in a fast-paced kitchen alongside a friendly efficient team.
  • Other duties as requested by management.
