The Sous Chef will work alongside the Head Chef to ensure the smooth day-to-day running of the hotel kitchens, ensuring exceptional customer service and culinary standards at all times.  The Sous Chef will manage and coordinate the kitchen teams and food service in the absence of the Head Chef.   


This role will require close collaboration with the Head Chef to ensure that the highest standard of cleanliness and customer service is achieved at all times.

About the role

  • Main duties and responsibilities

    • Manage and oversee the daily operations of the kitchen to ensure adequate resources are assigned to areas of need and that the required standard of service is provided at all times. 
    • Take responsibility for the general appearance and cleanliness of the kitchen to include; store rooms, fridges, freezers, dishwashing area, storage areas and the pass.  
    • Ensure adequate resources are available to meet critical business needs by maintaining and auditing inventory and placing orders where necessary.
    • Monitor occupancy forecasts to ensure that adequate staffing is available.
    • Assist the Head Chef in prepare kitchen rotas to ensure that staffing levels meet critical business needs.
    • Embed a cost conscious culture in Gallen Hospitality by controlling, reviewing and reporting on KPIs for the kitchen.
    • Ensure that the kitchen service is operated safely and hygienically with a focus on quality food standards. 
    • Set and monitor quality standards for your area of responsibility.
    • Work with the Head Chef to ensure that standard operating procedures are in place and up-to-date in the kitchen.   
    • Take responsibility for the kitchen procedures and the training of relevant employees in accordance with same.  
    • Audit all kitchen practices on a regular basis ensuring that the relevant procedure is being adhered to at all times.   
    • Develop and maintain trusting relationships with internal stakeholders to ensure that the highest quality of customer service and culinary standards are provided at all times and that knowledge is shared on a regular basis. 
    • Responsible for ensuring that the kitchen staff create a positive image and reputation of Gallen Hospitality when engaging with customers.
    • Investigate complaints regarding the kitchen service and equipment and take corrective action where necessary.
    • Ensure that the proper maintenance of all equipment is adhered to in line with the recommended standard and make arrangements for repair or replacement of used and damaged equipment. 
    • Ensure only approved cleaning materials and equipment is used by all kitchen staff.
    • Provide reports to the Head Chef on staff performance on a monthly basis and other ad hoc reports as required.  
    • Support in the design and preparation of all food menus and kitchen dishes.
    • Manages the kitchen to operate in a timely manner ensuring that the quality standards of food and customer service are met.  
    • Manage the delivering of quality food standards for all food bookings including bar food, restaurant, function room(s), weddings, tour groups etc.  This list is not exhaustive. 
    • Promote and monitor food safety standards across all areas of operations.
    • Ensure that standard operating procedures are in place and up-to-date for their area of responsibility.
    • Provide full support to the Head Chef and kitchen staff to ensure implementation and maintenance of the food safety standards and best practice
    • Take responsibility for the completion and follow-up of food safety records including, but not limited to HACCP.
